325/60/18 = 33.4x12.8/18
325/65/18 = 34.6x12.8/18
I would say more trimming or more lift will be necessary

35's will only fit with a stock wheel under a 3" lift and with you going to 325/65 they are def bigger than the 325/60 you already have you will need to run like a 305/60 I just lifted a truck for a customer and these tires fit perfect no trimming or anything.

here is a tire calculator i run a 305/65 r 18....same height as what your have right now just a hair taller and only 12" wide....
they fit without trimming, on stock rims...but when i got the 00 offset rims it was a big difference.

here is my truck with the 00 offset and the 305's

Do you know the offset of the rims you have? That is one of the major factors in determining what size tires will fit. Your new tire is about 1" larger than your previous tire... all things equal.

not sure. bought the truck brand new in 09 and the lift and rims and tires were put on by American Luxury Coach (ALC) a company chevy uses to do that stuff. so i dont know i just know that the rims are pretty deep.
