35" Toyo MT and 20" wheels with a -44 offset will make your truck look amazing, I wish I had that set up. I have heard as well that stacking blocks is dangerous but some lifts say to do it anyway. You can add a 2inch add-a-leaf in the back to level out the trucks with the Bilsteins set at 9.

Sounds like it will ride great.
