Typically low oil pressure is the sensor, or the engine worn out meaning the clearances are opened up on the bearings; not so common that the issue is in the pump/pickup. Is your pressure gauge reading any pressure at all?
I don't know about the LS 4.8&5.3 vortecs, but you may have to drop the pan some to get the cover off anyways if you do what you're thinking of
