I have an '06 with the Bose system, but the previous owner put in a pioneer touchscreen, and also an Axxess gm01 unit between the head unit and Bose amp (the gm01 is for non-bose trucks, gm04 is used when you want to keep bose.... so yes, he put the wrong one in there)

Is this the type of thing people do when they want to keep the Bose amp / speakers with an aftermarket head unit? This gm01 thing has a chime module in it too... is the chime supposed to come thru the main stereo speakers?

I believe the chime comes through left door speaker. At least it does on my 04.

Is it not "chiming" ? The chime unit may be turned down, mine has volume control.

Yes I think you're right, the chime volume was messed up.

Also, the head unit doesn't dim with the headlights, but I also noticed that it seems like the GM 24-pin connector doesn't have a dimmer wire. If this is the case, what is telling the stock head unit to dim?

If it wasn't originally a touchscreen, would it have a dimmer wire or would it just have a power supply to the button lights?
