Truck intermittently jerks while ac is on

So this issue has recently started happening and has never happened before. Seems like whenever I am driving at highway speeds with the ac on, the trucks intermittently jerks forward. I’ll push the ac button off and it drives normal with no jerking. Whenever I’m driving in the city, the jerk isn’t as bad as when on the highway but will lightly jerk while at a stop. I scanned the truck and no codes pop up at all. I’ve changed the spark plugs, installed new coil packs, cleaned the MAF sensor, cleaned and tested the fuel injectors and they are all good and even swapped the ac compressor and nothing has seemed to fix the issue. I’ve also checked fuses and relays related to the ac system and they are good as well so idk what to check next. Just seems weird how it only happens when I press the ac button on. Any ideas or suggestions would be appreciated.

Does it coincide with the ac compressor clutch engaging and disengaging? Is it more like a slight rpm increase instead of a jerk? The ecm may be increasing the engine rpms to compensate for the load of the ac compressor and then backing off after turning off the ac.
It could be that the compressor is getting worn out to the point that it "steals" additional horsepower from the engine and this is what you are feeling.

If the compressor is old or high mileage, you might consider preemptively replacing it before it seizes.

I can’t really notice the ac compressor engaging and disengaging while driving so I can’t say for-sure if it’s related to that. I notice the rpms slightly jumping up when at a stop but while on the highway (when it jerks the most) the rpms aren’t increasing.

I thought the ac compressor could of been worn since it’s the original from 2004 so I replaced it and it’s still having the same issue with a new one.
