cooling fan @ engine temp???

I bought a 2011 silverado and while sitting in a drive through I saw the engine temp going up about a 1/4 inch above the 210 mark.I though the fan was not working so I turned the ac on so the other fan would run and it cooled back down to 210. When I got back home I hooked up a edge cts2 that I've had for a while and the fan will turn on at 225 and back off at 210.I dont know if this is the norm or not,I'm an old school mechanic.
Could it be a sensor or the ecm be reprogramed ?? I just dont like it to run that hot.

My 2010 Sierra runs at 195 all day long with normal driving...even in the heat of the summer. The dash gauge shows 210 but that is sort of a dummy gauge. I have the readout on my android head unit from the OBD2 using the Torque app and it shows a much more accurate readout.

My 2013 sits at 210 most of the time. The fan runs at power level based on engine coolant temp. It shouldn't completely shut off at 210 and below. It will adjust power percentage based on temp. It's pretty quiet unless it's really running on high power. Most of the time you won't hear it because it is running on low power.

You can adjust fan settings with a tuner. I've been advised against setting the fan percentage too high for fear of burning them out.

The 210 visual that the dash gauge gives you is not accurate. If you connect to the OBD2 you will see it is 195...which is also what the stock thermostat is set at. These trucks hold that unless under a heavy load and sustained high RPM.

Thanks Neal. I always assumed that was the case. 210 on the analog dash gauge is dead vertical so they probably just had the needle be there at normal temp. Don't know why they couldn't have written 195 on the gauge if they were going to put numbers on it.

Your fans are operating normally. Those temps are what the factory tune is set to work at. The fans don't come on full power until you are "hot". At least most people who pay attention to these things probably think the same, that 220F+ is to hot... but not according to GM engineers I guess.

Here is factory electric fan tuning chart (for a 2012 truck, which is probably the same as yours) if you are interested.
